
INGREDIENTS:
6 slices of Canadian Bacon
6 large eggs
1 cup of egg whites
12 cherry tomatoes
1 cup of 2% cheddar cheese
Seasonings of your choice
DIRECTIONS:
Preheat oven to 375
Crack eggs into bowl
Add egg whites
Add seasoning
Combine well
Spray a 6 count muffin tin with nonstick spray
Put one slice of Canadian bacon in the bottom of each
Add 2 cherry tomatoes to each (I slice mine)
Top with the egg mixture
Add cheese
Bake at 375 for 22-25 mins
TIP - this is also a great lazy way to meal prep some breakfast. Put serving size amounts in food storage containers and keep in your fridge for up to 5 days
