SIMPLE MEAL PREP: CANADIAN BACON EGG MUFFINS


INGREDIENTS:

  • 6 slices of Canadian Bacon

  • 6 large eggs

  • 1 cup of egg whites

  • 12 cherry tomatoes

  • 1 cup of 2% cheddar cheese

  • Seasonings of your choice

DIRECTIONS:

  • Preheat oven to 375

  • Crack eggs into bowl

  • Add egg whites

  • Add seasoning

  • Combine well

  • Spray a 6 count muffin tin with nonstick spray

  • Put one slice of Canadian bacon in the bottom of each

  • Add 2 cherry tomatoes to each (I slice mine)

  • Top with the egg mixture

  • Add cheese

  • Bake at 375 for 22-25 mins

TIP - this is also a great lazy way to meal prep some breakfast. Put serving size amounts in food storage containers and keep in your fridge for up to 5 days
